Pan Roasted Potato

Place a heavy duty iron skillet into the oven and preheat both to 450 degrees F. Select several good baking potatoes and clean them. Cut them in half lengthwise (or quarters). Rub with olive oil and salt to taste. When the oven and skillet have reached 450F remove the skillet and place the potatoes in skin side up. Cook for 35 minutes or until a fork can penetrate the larger chunks easily. Butter, sour cream, chives, or just eat nekkid taters.
